Dr. Neelam Chaturvedi is an Associate Professor at Banasthali Vidyapith with over 24 years of academic and research experience in Food Science and Nutrition. Her research interests are functional foods, food product development, shelf – life evaluation, hydrocolloids, and natural pigments, with a strong focus on innovation and applicability. She has extensively contributed to research capacity building through the supervision of numerous doctoral and postgraduate research projects. She holds seven published Indian patents and five copyrights, and has published more than 90 research papers in journals published by Elsevier, Springer, Taylor & Francis, and CRC Press, and has authored multiple book chapters in reputed academic publications. Her scholarly contributions have been recognized through several academic awards and honors bestowed by reputed academic and professional organizations, acknowledging her sustained excellence in research, innovation, and academic leadership in the field of Nutrition.
